Ed David’s newest restaurant endeavor will be Bubba and Garcia’s, which he plans to locate near his Faded Rose on Rebsamen Park Road in early spring. David still has to go through the permit process, he said, and while it could go into the old Faded Rose building (next door to the new Faded Rose, which burned and has been repaired), he says he’s not given up opening in the vacated Buffalo Grill location should it become available. “We’d have to totally remodel the [old Faded Rose] building,” he said. Word is the Buffalo Grill building will be auctioned off at the courthouse steps in mid-November. David will be there, and any other potential buyers should note: “I’m the only one with parking, I control the parking,” David said. Bubba and Garcia’s will be a cuisine combination of “Bubba’s down-home cooking and Garcia’s New Mexican style,” David said, citing restaurants such as Roberto’s in Taos, N.M., and other smaller places. They feature shredded beef soft tacos and red chile and green chile enchiladas, queso fundido (white cheese with chorizo and chiles), carne asada (marinated steak and chiles) and New Mexican chile stew. Chicken fried steak and Texas red chile will be found on the Bubba’s side. Though it won’t have a full bar, David said, the restaurant will have margaritas, tequila and beer.
