Chef/owner James Meadors hopes to open FatSam's Louisiana Cafe in the northwest corner of the River Market in time for Riverfest. It's a concept, Meadors says, that will showcase not just the gumbos, jambalaya, etouffee and fried seafood of South Louisiana, but dishes that represent the rest of the state —pecan-smoked barbecue, hot water cornbread and white beans and ham.

To keep things unpredictable, Meadors says the menu, aside from staples, will shift every two to three weeks. He'll adapt, he says, based on what's available seasonally. In the future, he also plans to offer stuffed meats, fresh seafood and homemade boudin sausage for bulk purchase.

A Louisiana native, Meadors has operated FatSam's Catering Co. part-time for the almost seven years in Little Rock. This new venture, he says, will allow him to operate his catering business full-time.
