Three weeks ago, Philip Tappan and Todd Gold bought Purple Cow from Ed Moore and Paul Bash. By phone earlier in the week, Gold told us that he and Tappan plan to make cosmetic improvements, but not overhaul the concept. Service won't be interrupted.
In February, Gold was recognized by the Arkansas Hospitality Association as its Restaurateur of the Year for his work as the food service director and corporate executive chef for Acxiom. He's leaving that position to focus on Purple Cow, but will remain the director of Pulaski Tech's Culinary School.
Gold told us he might add daily or weekly specials or change soups out, but otherwise the menu will remain intact. In the next 12 to 18 months, he says he and Tappan hope to open a third location to join the Cantrell and Chenal outposts, likely in North Little Rock or Conway. Eventually, Gold says they hope to get to a point where they're opening a new Purple Cow every 12 to 18 months. Northwest Arkansas, Hot Springs and Germantown, Tenn., are potential candidates, he said.
