So, what do you do with your leftover turkey?  One suggestion, a recipe of mine on the jump for Smoked Turkey & PurpleHull Peas.  I started cooking up my peas with smoked turkey in an effort to recall the glory of ham in the family pea pot.  What I discovered was even better.  Recipe on the jump.

My recipe:

Smoked Turkey & PurpleHull Peas

2 cups smoked turkey, off the bone

1 quart PurpleHull peas, frozen

1 quart water

1 clove garlic, sliced (optional)

1/4 cup chopped onion

1/2 stick butter

1 Tablespoon salt

1/8 cup sugar

Saute onions and garlic (if using) in butter in bottom of pea pot.  When the onions are translucent, add water.  Bring water to a boil.  Add sugar and salt.  Add remaining ingredients and bring back to a boil, then reduce to low heat and let simmer for 90 minutes.  Best served with cornbread for sopping.
