I’ll admit it- I’m lazy. But I’m real lazy on Monday evenings. One of my favorite easy (and traditional) meals is red beans and rice. I soak a pound of them in a crock pot overnight. Drain the next morning until one inch of water above the beans. and add 1 stalk chopped celery, 1 finely chopped bell pepper, ½ onion chopped, and a bunch of chopped garlic. Cook in crock pot for 6-8 hours on high heat. Add Cajun Sausage one or two hours before done. Serve over rice. Season with Creole Seasoning and Hot Sauce to taste. There is nothing like that smell of red beans when you open the door after a long day of work. Dinner is almost ready.
I'm about to go start the rice. Any suggestions to this method/recipe are always appreciated. Yes, I know the crock pot is cheating to some, but we're back to the lazy part.
